ROLE OVERVIEW

The Wine Lead is responsible for curating, maintaining, and evolving the wine program at The Wolf’s Tailor. This includes wine pairings for our tasting menu, by-the-glass offerings, staff education, vendor relationships, cellar organization, and contributing to the overall beverage ethos. You’ll work closely with our Beverage Director and Managers to ensure that the wine program represents our goals. 

RESPONSIBILITIES
  • Build and maintain a dynamic, sustainable, and purposeful wine list.
  • Create thoughtful wine pairings that complement our evolving tasting menu.
  • Lead ongoing wine training for FOH staff
  • Manage inventory, costing, and vendor relationships
  • Be an active member in daily service
  • Collaborate with the culinary and beverage team on projects, events, and development.
  • Uphold a culture of equity, respect, and empathy.

QUALIFICATIONS
  • 3+ years in a wine-focused role in fine dining or progressive restaurant environments.
  • Deep knowledge of natural/low-intervention wines and an interest in regenerative agriculture.
  • Strong communication and storytelling skills.
  • Experience with pairings and working in tasting-menu settings preferred.
  • Systems-minded: you can run a clean cellar and manage costs
